Chunky Salsa
This is great with grilled chicken and seared fresh tuna loin

Ingredients (serves 4)
350g fresh tomatoes
2 red peppers
1 bunch of spring onions
1 red chilli
1 lime
fresh coriander
1 teaspoon sesame oil
1 dessert spoon olive oil
Salt and pepper to taste

Cut the tomatoes and peppers into big rustic pieces, chop the spring onions including the green stems, de-seed the chilli and chop finely, tear the coriander leaves then mix all ingredients together squeezing the juice of the lime over the top and serve.

Cheese and chive dip
This dip is ideal to serve with crudités of raw vegetables or tortilla chips

Ingredients (serves 4)
1 pack of light cream cheese
100g grated mature cheddar
200g chopped celery
fresh chives finely chopped

'Blitz' the cheeses and celery together in a food processor or in a bowl using a hand blender. If the mixture is a little dry for dipping add more chopped celery until sufficiently moist. Stir the chopped chives through to finish.
